Easy Sunday Rice Print

For many families Sunday dinner is a special occasion where the family gather and share a specially prepared meal. This vibrant rice dish is based the popular rice and peas which is a traditional Sunday dish across the Caribbean.
INGREDIENTS

1 can kidney beans/red peas
100g frozen mixed vegetables
200g rice
2 sprigs fresh thyme
20g coconut cream
1 bay leaf
1 spring onion
1 teaspoon cumin powder
1 clove garlic, finely chopped
½ tea spoon all purpose seasoning
1 red pepper, deseeded and diced
750ml water

Easy Sunday rice
METHOD
  1. Put the beans in a large pan with a tight fitting lid and add the water. Add the coconut cream, thymes, garlic, bay leaf, spring onion
  2. Add all the other ingredients to the pan
  3. Bring to the boil and add the rice. Stir well
  4. Cover the pan and simmer for a further 20-30 minutes or until the all the liquid has been absorbed and the rice is cooked. You may need to add more liquid to soften the rice.
Serves 6-8
