Antonia’s Spinach and Dried
Prawn Stew Served with Eba

Serves 4

4 large fresh tomatoes
2 scotch bonnet peppers
1 large onion, chopped
1 tablespoon Carotino oil
3 tablespoon tomato purée
pinch of thyme
pinch of curry powder
1 pack of dried prawns
4 skinless chicken drumsticks
250 g frozen spinach
Antonia’s Spinach and Dried Prawn Stew

Blend the tomatoes, peppers & onion in a food processor.
Heat the oil in a pan and add the blended ingredients.
Cook until mixture has reduced then add the tomato puree, spices, dried prawns, chicken and spinach.
Cook for at least 1 hour with the lid on.
Serve with Eba.

This dish traditionally includes salt fish. We have not included it in this recipe because 1 serving of salt fish contains 10 grams of salt and 6 grams is the recommended daily allowance. This dish is a very nutritious meal, however, people often eat a large quantities of Eba. Eba is classed as a starchy food and one serving is 2 heaped tablespoons. You may chose to have two servings in a meal, but nevertheless, be careful not to over eat.
